Winter Hominy Pork Stew (Posole Style)
2 Tbsp. vegetable oil
½ lb. lean pork, cubed (2 thick boneless pork chops)
1 small onion, cut into chunks
1 (14 -oz.) can. chicken broth
1 (15-oz.) can hominy, drained
1 (14-oz.) Rojo’s Fire Roasted Tomato & Green Chile Salsa
In 3 quart pot, heat oil and saute´ pork and onion until onion is tender. Stir in remaining ingredients. Cover and simmer 20 minutes. Makes 7 cups.
