Rapido Skillet Chicken Dinner

1 (15-oz.) Rojo’s Thick & Chunky Picante-Mild
1 (15-oz.) can pinto beans, drained well
1 ½ cups chicken broth
1 cup whole kernel corn
1 cup long-grain rice
6 boneless skinless chicken thighs
Sour cream (optional)

In large skillet or pot, mix together all ingredients, except chicken and sour cream. Place chicken in salsa mixture and bring to a boil. Cover and reduce heat to low. Cook 25 minutes or until rice is tender. Spoon onto plates and serve with sour cream. Makes 4-6 servings.
