Queso Blanco Creamy Mac n Cheese Recipe

So, leave it to Rojo’s to give mac & cheese a tasty Mexican twist! Our Queso Blanco Mac & Cheese recipe combines those fun little elbow macaroni noodles with Rojo’s Queso Blanco Dip. And it creates a rich and creamy blend of cheesy goodness your mac & cheese lovers will love at first bite!

It’s easy to understand why. Rojo’s Queso Blanco Dip is crafted with the finest white cheddar cheese, then accented with the robust flavor of roasted green chiles.   • 12 oz Rojo’s Queso Blanco Dip
  • 2 Cups hot cooked elbow macaroni noodles
  • 1/4 Cup Milk
  • 4 Tbsp. Butter, divided
  • 1 Cup panko crumbs
  • *Cooking Pan Spray


Preheat oven to 350ºF. Spray the inside of a 9 inch square pan with pan spray; set aside. In medium bowl, stir together macaroni, Rojo’s Queso Blanco Cheese Dip, milk and 2 Tbsp. butter. Pour noodle mixture into prepared pan. In small skillet, heat REMAINING butter, add panko and cook on medium heat until crumbs are lightly browned. Sprinkle crumbs evenly over noodle mixture.

Bake at 350ºF for 30 minutes or until heated through. Makes 4 – 6 servings.
