Pollo Verde Quesadillas
4 large flour tortillas
2 cups chopped cooked chicken
1 (13 oz) Rojo’s Tomatillo Avocado Salsa
cups shredded Monterey Jack Cheese
Place 1 tortilla on microwave safe plate. On top of each tortilla, layer 1/2 cup each: chicken, Rojo’s Tomatillo Avocado Salsa and cheese. Fold tortilla over onto filling. Microwave each plate on HIGH about 30 seconds or until cheese melts. Repeat with remaining ingredients and slice filled tortillas into wedges. Makes 4 servings.
Note: To heat in oven, place all filled tortillas on baking sheet and bake at 400ºF for 3-5 minutes or until cheese melts.
