Picadillo Stuffed Potatoes

4 baking potatoes
Non-stick pan spray
salt
1 lb. lean ground beef
1 small onion, peeled and chopped
1 (15-oz.) Rojo’s Fire Roasted Salsa
1/4 cup raisins
1 tsp. ground cinnamon
Toppings: Shredded Cheese, sliced green onions, sliced black olives (optional)

Preheat oven to 400°F. Scrub potatoes, spray with pan spray, sprinkle with salt, place on baking sheet and bake 1 hour or until soft. While potatoes bake, in skillet, brown beef with onion until onion is softened; drain. Stir in Rojo’s Fire Roasted Salsa, raisins and cinnamon. Keep warm until potatoes are ready. Place each potato on a plate and split open. Divide meat mixture evenly and spoon into potatoes. Sprinkle with favorite toppings. Makes 4 servings.
