4 corn tortillas, warmed
2 Tbsp. vegetable oil
1 (16-oz.) can refried beans
4-8 large eggs
1 (15-oz.) Rojo’s Homestyle Fresh Cut Salsa – Mild
2 thinly sliced green onions
1 cup Mexican Style Shredded Cheddar Jack Cheese
Place tortillas on 4 warmed dinner plates; set aside. In non-stick skillet, heat 1 Tbsp. oil and add refried beans, heat until hot. Divide beans evenly and spread over tops of tortillas. Wipe out skillet and use remaining oil to fry eggs. Place 1 or 2 eggs on top of beans, then top with Rojo’s Homestyle Fresh Cut Salsa – Mild, green onions and ¼ cup cheese. Makes 4 servings.
