Especial Picante Potatoes

1 pint half & half
1 (15-oz) Rojo’s Thick & Chunky Picante-Medium
3 large russet potatoes, scrubbed and very thinly sliced
1 cup shredded Monterey Jack cheese

Preheat oven to 400°F and spray a 9 x 13-inch baking pan with pan spray. In large saucepan, stir together half & half, 1 cup Rojo’s Thick & Chunky Picante-Medium and potatoes. Heat to boiling then pour into prepared pan. Bake, uncovered, at 400°F for 30 minutes or until potatoes are tender. Sprinkle cheese over top immediately after removing from oven. Makes 6-8 servings.
